Banana Cake
No need to "monkey around" with your ripening bananas. With this recipe, you'll know just what to do with them. Dessert anyone?

- 1/2 cup butter, softened
- 1 1/4 cups sugar
- 2 large eggs, beaten
- 1 tsp vanilla extract
- 4 tbsp sour cream
- 1 cup bananas, pureed
- 1 1/2 cups Peter Pan Flour
- 1 tsp baking soda
- 1/4 tsp salt
1. Preheat over to 350°F. Lightly grease a 6 x 9 inch or 8x8 inch baking dish.
2. Cream butter and sugar. Add eggs, vanilla and sour cream. Beat mixture well.
3. Combine Peter Pan Flour, baking soda and salt in a seperate bowl.
4. Add banana puree and flour mixture, altenating each until both are incorporated into your batter.
5. Spread batter evenly into prepared pan and bake for 45 minutes or until a toothpick inserted into the center comes out clean.
