Corn Griddle Cakes

- 1 1/4 cup Peter Pan Flour
- 2 1/4 tsp baking powder
- 2 tbsp sugar
- 1 tsp salt
- 1 cup Morrison's Premium Yellow Cornmeal
- 2 eggs, large, beaten
- 1 2/3 cup milk
- 4 tbsp butter, melted (or vegetable oil)
Preheat griddle or frying pan to 375°F.
Combine flour, baking powder, sugar and salt.
Combine eggs and milk. Add to dry ingredients, mixing well.
Add melted butter.
Ladle onto greased griddle or frying pan. Cook 1 to 2 minutes on each side, turning only when bubbles appear on top and edges of cake appear dry.
Serve hot with syrup.
