Bird's Nests Cookies
These cookies make delightful gifts- match the preserves to the recipient's favorite flavor for someone extra special.

Yield: 1 dozen
- 1/2 cup butter, softened
- 1/4 cup brown sugar
- 1 egg, separated
- 1 1/4 cup Peter Pan Flour
- 1 cup pecans, finely chopped
- 1/2 cup blackberry jam (or your favorite flavor)
Preheat oven to 350°F.
Cream butter and brown sugar.
Add egg yolk and flour, beating to a smooth dough.
Roll dough into small balls. Dip each into slightly beaten egg white and roll in chopped nuts.
Place cookies on baking sheet and press in at center with finger.
Bake for 5 minutes. Remove from oven and press in center again. Return to oven and bake for another 15 minutes.
Transfer to wire rack and allow to cool.
Once cool, fill center with blackberry jam or any jam/jelly.
