Bird's Nests Cookies

These cookies make delightful gifts- match the preserves to the recipient's favorite flavor for someone extra special.

  • 1/2 cup butter, softened
  • 1/4 cup brown sugar
  • 1 egg, separated
  • 1 1/4 cup Peter Pan Flour
  • 1 cup pecans, finely chopped
  • 1/2 cup blackberry jam (or your favorite flavor)


  • Preheat oven to 350°F.
  • Cream butter and brown sugar.
  • Add egg yolk and flour, beating to a smooth dough.
  • Roll dough into small balls. Dip each into slightly beaten egg white and roll in chopped nuts.
  • Place cookies on baking sheet and press in at center with finger.
  • Bake for 5 minutes. Remove from oven and press in center again. Return to oven and bake for another 15 minutes.
  • Transfer to wire rack and allow to cool.
  • Once cool, fill center with blackberry jam or any jam/jelly.
