Corn Griddle Cakes

Materials

  • 1 1/4 cup Peter Pan Flour
  • 2 1/4 tsp baking powder
  • 2 tbsp sugar
  • 1 tsp salt
  • 1 cup Morrison's Premium Yellow Cornmeal
  • 2 eggs, large, beaten
  • 1 2/3 cup milk
  • 4 tbsp butter, melted (or vegetable oil)

Instructions

  • Preheat griddle or frying pan to 375°F.
  • Combine flour, baking powder, sugar and salt.
  • Combine eggs and milk. Add to dry ingredients, mixing well.
  • Add melted butter.
  • Ladle onto greased griddle or frying pan. Cook 1 to 2 minutes on each side, turning only when bubbles appear on top and edges of cake appear dry.
  • Serve hot with syrup.
