Kielbassa-Cornbread Dressing

- 1 onion, chopped
- 1 cup celery, chopped
- 4 tbsp butter
- 2 cups breadcrumbs, fresh
- 3 cups Morrison's Corn-Kits Cornbread, crumbled
- 1/2 tsp sage, dried
- 1/2 tsp salt
- 1/2 tsp black pepper, ground
- 1 tbsp parsley, chopped
- 1 1/2 cups kielbassa, chopped (or other smoked sausage)
- 1 cup chicken stock (or water)
- 1 egg, Beaten
Prepare Morrison's Corn-Kits Cornbread according to package instructions and allow to cool. Once cool, crumble into 1/2 inch pieces.
Preheat oven to 350°F.
Sauté chopped onion and celery in butter until onion is soft and translucent.
Combine bread crumbs, cornbread, sage, salt, pepper and parsley in a large bowl.
Add sautéed vegetables and sausage, stirring until well combined.
Add stock (or water) until dressing reaches desired moistness.
Add egg and mix well. Place in a large casserole dish.
Bake for 30 minutes. Safety Note: If being used to stuff meat, it is very important that the stuffing reaches an internal temperature of 170°F.
