Kielbassa-Cornbread Dressing

  • 1 onion, chopped
  • 1 cup celery, chopped
  • 4 tbsp butter
  • 2 cups breadcrumbs, fresh
  • 3 cups Morrison's Corn-Kits Cornbread, crumbled
  • 1/2 tsp sage, dried
  • 1/2 tsp salt
  • 1/2 tsp black pepper, ground
  • 1 tbsp parsley, chopped
  • 1 1/2 cups kielbassa, chopped (or other smoked sausage)
  • 1 cup chicken stock (or water)
  • 1 egg, Beaten


  • Prepare Morrison's Corn-Kits Cornbread according to package instructions and allow to cool. Once cool, crumble into 1/2 inch pieces.
  • Preheat oven to 350°F.
  • Sauté chopped onion and celery in butter until onion is soft and translucent.
  • Combine bread crumbs, cornbread, sage, salt, pepper and parsley in a large bowl.
  • Add sautéed vegetables and sausage, stirring until well combined.
  • Add stock (or water) until dressing reaches desired moistness.
  • Add egg and mix well. Place in a large casserole dish.
  • Bake for 30 minutes. Safety Note: If being used to stuff meat, it is very important that the stuffing reaches an internal temperature of 170°F.
